Edit exec line (add ‘env GTK_THEME=Adapta’) to look like

Exec=env GTK_THEME=Adapta /usr/lib/firefox-esr/firefox-esr %u

Then

update-desktop-database ~/.local/share/applications

^ This misses any decision logic, fail as well.
